Remember when CSN Stores graciously sent me a crock pot? Well I finally used it last night, and I am so happy with the results! I made a very easy salsa shredded chicken recipe from this book
that my friend recommended.
2 main ingredients: 1 1/2 pounds of chicken and 1 16 oz jar of salsa.
The recipe recommended eating as a taco, so I bought a taco set.

Before leaving for work yesterday morning, I threw together the chicken and salsa, set it to cook, and when I came home at 6 pm, I walked into a yummy smell and no fire in the apartment (lol, I was worried, as were my roomies).

I shredded the chicken, put into the tortillas, added some guac, hot sauce, and rice, and voila!
The crockpot itself is fool proof, as there are only a few settings and very easy clean up- the center bowl comes out and is dishwasher safe!

ReplyDeleteTotally trying this recipe. My brother got us a crockpot for Christmas one year and I LOVE it. My favorite part is that it's HUGE so I can make big meals in it.
ReplyDeleteToo funny because the exact same thing is in my crockpot as we speak! Mine is my MIL's crockpot from the 70's and I'm always scared about a fire. Considered putting it in my bath tub while it cooked but that would just be gross. So far so good!

Looks yummy, I love crock recipes! I do a similar with enchilada sauce and shred the chicken for burritos!
