I starred this Real Simple recipe email in my Gmail last week, and tonight I decided to make it. Being culinarily challenged, the small ingredient list, fast cook time, and that it's in one pot was right up my alley. I also love summer squash.
I made a few edits. The recipe called for halibut, but Southie Stop & Shop didn't have, so I went with cod...very New England! The recipe called for jalepenos and diced tomatoes; I decided to get zesty chile spicy tomatoes- killing 2 birds with 1 stone! I recipe suggested red onion, but it gives me heartburn, so I went with a yellow onion.
Had to do a little improvising here...not to self: need a larger pan!
I was worried that the cod wasn't fully cooked, so I left it on the stove about 5 minutes longer than the recipe said. Overall, the dish was delicious and very easy. I have 3 meals of leftovers too!
