My Dream Spring Break: St. John

My Dream Spring Break? I'm assuming I get an unlimited budget to plan this right?  Well even if the answer is no, the spring break vacation I'm about to share with you was planned as if money was no option.
Destination - St. John in the U.S. Virgin Islands!
I have never been to St. John but a very good friend of mine goes there every year with her family and absolutely loves it! It is also favorite of country superstar Kenny Chesney, so you know it's gotta be full of sun, sand, and "drinks in hand".
After doing some research online I settled on The Westin St. John Resort & Villas and chose the Bay Vista Villa loft (it IS a dream vacation after all!!).
Located on 47-acres and on the shore of Great Cruz Bay the resort has endless activities and entertainment to suite everyones preferences.
My choice? Lounge at the beach all day and indulge in a spa treatment - hot stone massage next to the water followed by drinks on this patio anyone?
 A must-see on my list is The Baths & Caves. Believed to be the setting of Treasure Island as well as a potential spot of some of Blackbeard's hidden treasure, the Caves is a picture perfect snorkeling destination. Cruz Bay Watersport Co. will take you aboard a 60 foot cruiser to the Caves in the morning and then on to The Baths in the afternoon to explore the world famous grottoes and crystal clear pools.
Finding a traditional Caribbean restaurant is a must, and I have my sights set on Sweet Plantains. Their West Indian Creole menu is inspired by ancestral culinary traditions of home cooks from around the Caribbean. I'm already drooling over the menu which features items such as deep fried sweet plantains (of course!), market seafood, jerk pork slow cooked with house spiced rum and guava bbq sauce served with a pickled green papaya slaw, along with many island inspired cocktails.

My Dream Spring Break: World Travel Bucket List

My sister went here during her trip abroad and the pictures were unbelievable. It’s a coastal town in Italy with amazing beaches and even better food. I wouldn’t go in the summer because it’s too hot, but it would be a good winter or fall trip.

My parents went here and said it was a beautiful, historic old European city with amazing cobblestone streets. I would love to see all the historical sites and museums and experience the people and culture.

This would be a dream come true, something I’ve thought about since watching the Sydney olympics! I’d love to see Sydney and travel around some other areas in Australia, such as the Great Barrier Reef.

I see that so many celebrities vacation here, and it just looks like the perfect beach vacation spot. This would be a nice change up from the Florida beaches I’m used to, to something more tropical.

I keep seeing pictures of the coast of Greece on Pinterest, and since I love Greek/Mediterranean food, I’d love to tour Greece and its islands.


My Dream Spring Break: Big Sur & Bali

While my wish list of places to visit is a long one, spring break makes me think of one word: relaxation. Which crosses out all of those multi-city European tours, and narrows down the list to those places where you have nothing to do but soak in the sun, devour some good books and indulge in a spa treatment or two.

If staying domestic, I would love to spend some time with my husband at the Post Ranch Inn in Big Sur, CA. I have had my eye on this cliff-side beauty for years, and it exudes natural luxury. All of the rooms are completely unique, with organic architecture blending into the stunning surroundings.


I would split our time between the Tree House (think 9 feet up in the forest, with a skylight to watch the stars) and the Cliff House (think floor to ceilings windows perched over the ocean, with a wood burning fireplace and an outdoor hot tub).

If traveling abroad, we would hop on a flight over to Bali and gorge ourselves on the decadence of Indonesia's natural beauty. The Amanusa is another hotel on our list, and it provides the perfect, serene setting on a garden hillside in Southern Bali. With a vibrant culture to explore right outside of the hotel, and with activities ranging from sailing to yoga right within the hotel, it would be the perfect spring break.
